Menchies vs. Farmer's Market

I love ice cream with stuff in it.  In fact, I like stuff with stuff in it.  I like sauces, toppings, different textures and flavors, you name it.  Menchie's has frozen yogurt and LOTS of toppings and I have been craving it like nothing else.  I told myself yesterday that if I ran, I could have it for dinner.  This is because the toppings I choose aren't the fruit and cereal kind... last time I went I got peanuts, oreo cookies, butterfinger, and heath bar crunch (which I told myself would be my lunch, except that I ate it an hour after breakfast and had lunch two hours later...).  So healthy frozen yogurt no longer.

Can you spot the frozen yogurt?  No?  That's the way I like it.


Well I didn't run yesterday.  I ran today.  BUT I also went to the Farmer's Market and got lots of goodies I wanted to make for dinner.  Decisions, decisions.

I decided to eat my Farmer's Market dinner because Menchie's will always be there... besides, I have other ice cream already in my freezer :)

What I bought today:


Fresh Mint - the leaves were huge!

Purple, yellow and orange carrots

2 bunches of kale

4 bunches of delicious, delicious arugula

Red and yellow beets

The Sunday Farmer's Market had a stand with a mustard-based salad dressing that I bought a week and a half ago.  I have since used every last drop of it.  It was amazing.  The same stand was not at today's market so I got adventuresome and made my own.  I mean, it's not rocket science, but I've never actually made my own salad dressing before!  I really just eyeballed the ingredients and added them one by one to the food processor.  Success!

With that complete, I put the rest of my meal together.  And no, believe it or not, I could not get B to share this with me.  Surprised?  Maybe he really just loves cereal that much, because I can't resist this stuff.

Chopped the beets - so pretty!
Roasted the beets and carrots with non-stick spray and herbs de provence
Then add the roasted veggies, sauteed and chopped swordfish steak, arugula, fresh mint, goji berries, and feta to a bowl.

Add a few small spoonfuls of the dressing (yes, I keep it in an old gelato container)

And voila!
Seriously, this was delicious.  AND this meets my criteria for stuff with stuff, don't you think?

And that may or may not be my Kitchenaid mixing bowl that I am eating out of.  Serious lack of giant bowls around here and I insist on making my salads in gargantuan size only.  I like to eat a lot.
