Baking Experiments

I love having an excuse to bake.  I can't bake on a regular basis, as much as I'd love to, because we just CAN'T have lots of sweets around the house.  They would disappear way too quickly, and I have recently discovered that any sugar in the evenings keeps me up all night. Sad face.  Big fat sobby sad face.

So when we got invited to a Memorial Day BBQ, I jumped on the chance to finally whip up some of those recipes that have been staring me in the face.  I like to give people options, so I found two recipes to try out on the group.   They say you're not supposed to experiment on guests the first time you make a dish.  Well I don't know who "they" are, but hopefully not my friends.  Because I do this all the time.  And this was a partial success.  Maybe something to that old adage?

The guests at the party only got to taste one dessert.  And I just didn't tell them another one existed.  The other is currently re-baking in my oven in an attempt to salvage the soupy disaster it was yesterday.  Crossing my fingers it works.

The Success - White Chocolate Coconut Blondies
Since I'm pretty sure I received a death threat if I ever bring these to a BBQ that involves bathing suits again, I'd say they were a success.  Ridiculously mucculent (who else doesn't like the word moist?  Just exploring alternatives).

The other recipe?

Blackberry cobbler bars..... yummmmmm!  The recipe said to bake for 55 minutes.  Which I did.  Once they cooled and I realized they were still gooey inside, I baked them for an additional HOUR.  I don't know if it's my oven or the recipe or what.  But they are fresh out of the oven right now (again) and the smell makes me feel like I need to go for a run.

These will make their debut this afternoon at our local beach bar, because remember?  I can't have these in my house.  I would receive more threats from B.  And then I'd have to throw them out.  And deal with his confusion over me tossing them out, even though he just said.....  It's just easier this way.

Another highlight of the BBQ?  Our friend's dad's rock collection:

What is that?

I'm immature.
