Childhood Flashback - Chocolate Peanut Butter Marshmallow Squares

I love cooking things that remind me of my childhood.  It makes me wonder what I'll make for my kids some day that they will remember with such clarity like I do.  What may not mean much to the one cooking it, may make a huge impact on those eating it.

Every summer growing up, my family would go to the Park Playhouse in Albany's Washington Park to watch the annual musical.  The facility is set up as an amphitheater with stadium-style seating.  Everyone brings a picnic dinner and hunkers down for the evening.  We usually brought sandwiches and drinks from a pita and sandwich shop I worked at in early high school, but the one thing we ALWAYS had were my mom's chocolate peanut butter marshmallow squares.

They are super easy to make, but that was the one time of year that we ate them.  So now whenever I eat these or think of these, it brings me back to the Park Playhouse.  Here is the recipe:

Chocolate Marshmallow Squares
Servings: 20 squares (depending on how big you cut them)
Prep time: 5 minutes
Cool time: 1 hour



Ingredients:

  • 1 cup chunky peanut butter
  • 12-oz bag of chocolate chips
  • 1 bag miniature marshmallows
Procedure:
  1. Melt peanut butter and chocolate chips in a large bowl in the microwave.  Mine took 2 30-second intervals, stirring in between.
  2. Stir in marshmallows.
  3. Pour into a grease 8x8 or 9x13 (for slightly thinner squares) pan; chill for at least 1 hour.
  4. Cut into squares and enjoy!
