I've been cooking up a storm this month. I don't think that Brendan and I have gone out to eat during the week for all of January. I truly do love cooking, it's just a matter of getting into a routine, planning ahead, and utilizing left-overs.
I have used the crockpot quite a bit, which has made meal time very easy. I never know exactly when Brendan will get home from work and I have been taking evening classes at the gym. Coming home at 8pm and having dinner ready is warm and inviting! I tend to just play with ingredients and see how it turns out. If I've used a specific recipe, I'll link to it. If anyone is interested in more specifics from anything below, just let me know!

Cooking always makes me feel very accomplished and is relaxing for me, so I've been loving all the homemade meals lately! Besides, I love leftovers. Any leftover meat is great on a salad or with sauteed veggies. All of these can be paired with any type of grain for a well-rounded meal.
